Here’s an easy Sunday night recipe to make with your friends and family– personal pizzas in cast iron skillet pans. I used an 8 inch skillet but really a smaller 6 inch would work great as well. This recipe is great because you can also use store bought dough and sauce when you don’t have time to whip up homemade dough and sauce. I took the store bought route this time but will revise the recipe once I work out the dough recipe.
Ingredients:
Pizza dough (homemade or store bought)
Pizza sauce (homemade or store bought)
Shredded mozzarella
1/2 pint of Mushrooms
1 pint of cherry tomatoes
2 Tbsp basil
1 Tbsp oregano
a pinch of salt
1/2 Tsp of red pepper flakes
1/4 Tsp of garlic powder (if desired)
2 Tbsp Olive oil
Directions:
Preheat the oven to 400 degrees. Brush the skillet with olive oil. You’ll want to place the skillet into the oven to heat it before adding the dough, toppings, etc. Pre-heating the skillet will actually allow the pizza to cook more evenly. Take the skillet out of the oven after about 10 minutes, using a sturdy oven glove. Remember that the pan is hot so leave the glove on one hand while you work through the next steps. Press the dough into the skillet and allow the dough to run up the sides to create the crust. Spoon 2 Tbsp of pizza sauce onto the dough in each skillet to cover the dough. In the meantime, sauté mushrooms on the stovetop until the mushrooms become smaller and are soft (about 12 minutes over medium heat). Add the cherry tomatoes, cut in halves to the top of the dough. Finally, add the cheese, as much or as little as you’d like. Feel free to also mix cheese varieties. Bake the pizza in the over for 15 minutes or until the dough has fully cooked through. The top of the crust will begin to develop a golden brown color. Once ready, remove from oven and allow to cool a bit before serving. A family and friend favorite in my books!! Enjoy!
