Peanut Butter Banana Bread

Nothing bad ever resulted from combining flour, butter, sugar, bananas, peanut butter (and a few other ingredients).

 

Ingredients:

1 stick of butter (1/2 cup), melted

2 ripe bananas, mashed

2 cups of flour

1 cup of sugar

3/4 cup peanut butter

2 eggs

1 tsp baking soda

a pinch of salt

 

Directions:

Combine melted butter, peanut butter, sugar and eggs and gently stir.  Add flour, baking soda, salt and bananas into the same bowl and stir until ingredients are well combined.  Place mixture into a 9”x 5 x 3” greased loaf pan.  Bake at 350 degrees for about 45-50 minutes or until golden brown on top.  You can also use a cake tester to ensure that the loaf has fully baked through with no wet ingredients showing on the cake tester. Let the loaf cool before removing from the pan and cutting into slices.  The loaf can be wrapped in wax paper and foil and will last about 4-5 days. Feel free to even freeze a few slices for those times when you’d like a piece of peanut butter banana bread, without the work!
