Fish Tacos
It's finally the weekend and I just couldn't wait until summer to make these fish tacos. I usually enjoy grilled or sautéed fish and I find that tilapia is well priced, easy to cook in a short amount of time and always tastes great! I jumped into the recipe using my favorite flavors.
Ingredients:
-About 2 pieces of Tilapia for 2 servings
-1 Tbsp garlic
-1 Tbsp olive oil
-1/3 cup lime juice
-2 Tbsp fresh cilantro, finely chopped
-1 tsp paprika
-pepper and salt to taste
-Corn tortillas
-1 Avocado
-Cherry tomatoes (1 bunch)
Directions:
I try to marinate the fish for about 1-2 hours ahead of time. Combine the lime juice, garlic, cilantro, salt & pepper and paprika in a shallow baking dish and cover fish in mixture. Cover the dish and put in the fridge for up to 2 hours or longer if you have the time!
When you're ready to begin cooking, heat a saute pan with olive oil and add the fish. Cook until the fish becomes opaque and the fish becomes flakey. It should take about 10-15 minutes on a high heat for the fish to fully cook through.
In the meantime, you can warm the corn tortillas by putting them in the microwave for about 25 seconds. Slice the avocado and tomatoes. Add the fish to the warm tortillas and top with avocado and diced tomatoes. Sprinkle some additional cilantro to finish.
I enjoy my fish tacos with a nice white wine but the fish can be paired with a variety of options.
