Passionfruit Lemon Coconut Bars
Today marked the day I finally found passionfruit at the local market! There's just something about this fruit that is amazing. I was introduced to this flavor a few years ago in a donut with passionfruit glaze. It's rare to find the actual fruit and since I've mainly used the frozen pulp or juice, which is usually made by Goya, I was extra excited by this purchase. Of course, I flagged many recipes that I've wanted to try if I ever had the opportunity and now it's here. Passionfruit has such a great tart flavor and I've found that it's such a versatile taste, I can pair it with so many different options.

Ingredients:
For the crust
-1 stick of butter (melted)
1 1/2 cups of flour
A pinch of salt
1/3 cup sugar
1 tsp vanilla
Directions for the crust:
Preheat the oven to 350 degrees. Use an 8 x 8 pan and cover with parchment paper. Grease the parchment p In a bowl, combine the flour, sugar, salt. Then add the melted butter and vanilla. Stir until the ingredients have been fully combined.
For the filling:
1/2 cup of granulated sugar
3-4 passionfruit, juiced (about 1 cup)
1-2 lemons, juiced (about 1 cup)
2 eggs
2 egg yolks
4 Tbsp butter (cold, cut into pieces)
Directions for the filling:
Juice the passionfruit and lemons to make about 1 cup of each. Combine the juices with sugar in a pot over a low simmer on the stovetop. Stir until the sugar has disintegrated into the mixture. In a separate bowl, combine the eggs and egg yolks and whisk. Add the eggs to the pot on the stovetop and mix at a constant pace for about 5-6 minutes. You may notice some white parts of the eggs in the mixture but don't worry because you'll be able to strain these out. Take the pot off of the stovetop and strain through a mesh strainer, into another bowl. Pour the hot mixture on top of the crust (which should be baked after those 10 minutes). Bake the entire dessert for another 15 minutes, until the filling becomes solidified.
Let cool and cut into pieces. It should make about 16 decent-sized bars. Cover in a container and refrigerate for up to 3-4 days. I would recommend tasting one before your family finds out what you've made- these will go fast!
