Coconut Chocolate Chip Loaf
I've been thinking of quick and easy desserts, great for on-the-go picnics and traveling for the summer, and I came up with a loaf cake that has great flavor and does not take a lot of time to prepare!
Ingredients:
2 cups of flour (I used my favorite- Champlain Valley Milling Soft Winter White Wheat)
1 cup of sugar
1/2 cup of shredded coconut
1/2 cup of chocolate chips
1 tsp of vanilla
1 tsp of ground cinnamon
2 eggs (slightly beaten)
1 cup of milk (1% or whole milk)
Directions:
Preheat the oven to 350 degrees and generously grease a 9" x 12" loaf pan. Combine the flour, sugar, shredded coconut, vanilla, ground cinnamon in a bowl and stir. Add the slightly beaten eggs, milk, chocolate chips and shredded coconut. (You'll want to use additional shredded coconut for the top of the loaf). Once the ingredients are well combined, pour into the loaf pan and bake in the oven for 30-40 minutes, depending upon your oven. About 25 minutes through baking, sprinkle a handful of coconut on top of the baked loaf and then continue baking until you can insert a toothpick into the loaf and no wet batter is present. Let the loaf cool after taking it out of the oven. Wrap up a few slices to take with you when you go to the park and maybe even some lemonade (A very berry strawberry lemonade) from the Drinks section! Don't forget the sunblock too!
