Grilled Zucchini
I've got a secret for summertime grilling from a tiny NYC apartment- the George Foreman grill saves the day! With such a great selection of veggies, I've realized that grilling these brings out some amazing flavors. With a little seasoning and a few minutes of grill time, these are a great addition to any meal. You can use the same recipe for other veggies too- eggplant, peppers, onions, whatever works for you!
Ingredients:
1-2 medium sized zucchini
1/2 cup of balsamic vinegar
2 Tbsp of olive oil
A pinch of salt and pepper
Directions:
Prep the zucchini by cutting then in rounds and feel free to either leave the skin on or peel it off (either works for grilling). Place a bit of pepper along each piece of zucchini and soak in a bowl in balsamic vinegar for about 15 minutes. Spray pam or cooking oil on the grill and add zucchini. Cook each piece until they are brown and softened. It should take about 5-8 minutes for each, flipping them over half way in between grilling. Ready to eat!
