Warm Peaches and Brie
August is primetime for peaches and they taste amazing! Today, I realized that I have so many peaches that I wanted to make something a little creative. I think most people can agree that peaches, honey and cinnamon are a great combination- so why not add some brie. This recipe took about 15 minutes plus a few minutes of prep and cleanup- it's well worth the time. I know you're probably running out to pickup peaches right now! This would be an easy appetizer to serve to friends and family or even just a fun snack to have on lazy Sunday afternoon.
Ingredients:
Peaches (4- makes 2-3 servings)
2 Tbsp Honey
2 Tsp cinnamon
1/2 Tsp vanilla
Brie (figure about a small piece, size of a quarter, on top of each slice of peach)
Directions:
Slice the peaches into wedges. You should be able to get about 4-5 slices from each piece. Then add the peaches, cinnamon, honey and vanilla in a bowl and gently combine. Add to a grill or you can even saute them in a pan, enabling the peaches to warm and bake through, until the slices are softened. This should take about 10 minutes. Then, add the Brie to the top of each slice and flip over so that the cheese melts into the peaches. This takes about 1-2 minutes. Serve warm.
