Vanilla Bean Chocolate Chip Loaf

Simple and absolutely delightful....that's the only way to describe this vanilla bean chocolate chip loaf. The process of combining the ingredients, stirring the mixture, pouring the batter into the pan, placing into the oven, and anticipating the finished product based on the delectable aroma filling the kitchen.  These are the steps that you will go through when you embark on this recipe and you will love the finished product (your taste buds and tummy will too!)

Ingredients:

1 1/2 cups of flour (I used a local flour from the NYC greenmarkets, no preservatives or additional processing!) 

2 eggs (local eggs are pretty amazing but whatever is on hand is great too!)

1/2 cups of sugar

1 Tbsp vanilla bean extract (Rodelle is a pretty amazing company, the vanilla is perfect for the recipe and their company sustainable practices are admirable!)

2 Tsp of baking powder

a pinch of salt

1 1/2 cups of chocolate chips or dark chocolate chunks, bars broken into pieces

1 stick of butter (melted)

1/4 Tsp of cinnamon

Directions:

Preheat the oven to 350 degrees. Spray a generous helping of cooking oil spray or butter into a 9"x 12" loaf pan and set aside.  Combine the flour, sugar, baking powder, salt, cinnamon in a mixing bowl. Add the melted butter, 2 eggs and stir until the ingredients are well mixed.  Gently fold in the chocolate.  Pour the batter into the loaf pan and bake in the oven for about 30-35 minutes, until the top is a light golden brown color.  You may want to wrap a foil around the outer edges of the pan to prevent the loaf edges from getting too golden brown.  The middle of the loaf will take a little longer to bake.
