Lemon Strawberry Scones & Vanilla Chocolate Chip Scones

When you have a craving for scones and you can't decide which type to make....split the batch and make lemon strawberry and vanilla chocolate chip! Some may believe that scones are intimidating to make, however, once you get the process together, you have a delectable treat! Kneading the dough is actually fun too!

Ingredients:

4 cups of flour

6 tbsp of sugar

4 1/2 tsp of baking powder

a pinch of salt

1/2 cup of butter (1 stick)

1 Tbsp vanilla extract

1 Tbsp lemon extract

1/2 cup milk (whole milk or 1%)

1 cup of frozen berries (strawberries)

 

Directions:

Combine the flour, sugar, baking powder in a bowl. Then cut the butter into the mixture by using a pastry blender or just a fork.  You'll basically break the stick of butter into small chunks. Add the lightly beaten eggs and milk and fold the dough until the dough is moist and you can begin to work with it. Knead the dough for 5 minutes, continuously.  That's the basic scone recipe but now, when you choose between making lemon strawberry or vanilla chocolate chip, see below:

Lemon Strawberry:

-1 Tsp lemon extract

-1 Cup of strawberries (fresh or frozen)

-1/4 Tsp vanilla extract

Add the ingredients to the basic dough and fold the strawberries into the dough so that the strawberries are distributed throughout the dough.  Then, form the dough into a 8 or 9 inch round ball and create slices (like a pizza pie). You'll want the pieces to be the size of your fist.  Alternatively, you can form individual pieces, also the size of your fist.  Place on the parchment paper on the cookie sheet and place into the oven for about 20-25 minutes, or until the tops and bottoms are a light golden brown color.  

Vanilla Chocolate Chip

-2 Tsp vanilla extract

-1 Cup of chocolate chips or chunks of a chocolate bar (I prefer dark chocolate!)

Repeat the process, as noted above with the lemon strawberry variation.
