Cranberry Cake
It's the most wonderful time of the year! Time for an abundance of cranberries! I stock up on cranberries, freeze some, bake with others, and cook up a few good meals with the rest. I volunteered to bring some desserts to Thanksgiving this year so I went with cranberry cake (and a pumpkin pie but that's for another post). The base of the cake is super simple and you can pretty much add your favorite type of fruit- blueberries, mixed berries, etc.
Ingredients:
About 2 1/2 cups of a 16 oz bag of cranberries (fresh or frozen)
1 1/2 cups of flour
1 stick of melted butter
1 3/4 cup of sugar
1 tsp vanilla
2 eggs, beaten
Directions:
Preheat the oven to 350 degrees. Grease a square pan (either 8x8 or 9x9). Wash the cranberries. In a mixing bowl, combine the flour, sugar, vanilla. Add the melted butter and 2 eggs. Mix together and then add the cranberries, gently folding the cranberries into the batter.
Pour into the greased pan and pop into the oven for about 30-40 minutes, until a cake tester or toothpick comes out clean. Enjoy!
