Gingerbread Cookies
Ginger, cinnamon, nutmeg, Oh my! Let's make some gingerbread cookies for Christmas morning (or really anytime)!
Ingredients:
2 1/2 cups of flour
1 cup of melted butter
1/2 cup of brown sugar
1/4 cup of Honey
2 Tsp Ground Cinnamon
2 Tsp Ground Ginger
1 Tsp Nutmeg
2 Tsp Baking soda
Directions:
Preheat the oven to 375 degrees and grease a shallow baking pan or cookie sheet. This recipe will make about a dozen medium size cookies.
Combine the melted butter, sugar and honey in a small bowl. Mix until well combined. In a separate bowl, combine the spices, baking soda and flour. Add the wet ingredients into the flour mixture and stir until the dough begins to form. You'll begin to knead the dough, add some water if the dough is dry. Roll the dough into a log or round form and wrap in plastic wrap. Place into the refrigerator for about 1-2 hours for the dough to firm. You can make the dough about 1-2 days ahead of time and leave in fridge until you're ready to make cookies!
Using a rolling pin, on a floured surface, such as another cookie sheet, roll the dough into a 1 inch thick layer. Using a gingerbread cookie cutter, cut out the dough into forms and place onto the greased cookie sheet. Bake for about 8-9 minutes or until the cookies have become golden brown. About halfway through baking, remove the cookies from the oven and sprinkle raw sugar onto the cookies along with drizzles of maple syrup, which brings out some additional flavor!
