Passionfruit Banana Muffins
I've got a great idea for your next breakfast. It's quick, easy and full of flavor. You can throw them in your bag on your way to work, toast them, freeze them, any way you like them. Passionfruit and banana muffins!
Ingredients:
2 passionfruit or passionfruit pulp (whichever you're able to find)
2 cups flour (I used 1 cup whole wheat flour and 1 cup all purpose flour)
1/2 cup sugar
1 tsp vanilla bean
1 banana (I had a frozen banana that I used)
2 eggs beaten
1 stick of butter (1/2 cup)
2 tsp baking powder
Instructions:
Combine the flour, sugar, baking powder, vanilla bean in a mixing bowl and add melted butter, 2 eggs and stir together. Add the passionfruit and mashed banana to the mixture and combine. Grease a 12 cup muffin pan or use the muffin liners and add about 1 ice cream scoop full into each muffin crevice. Bake at 350 degrees for about 20 minutes or until the tops are brown and a cake tester comes out clean (meaning that no muffin batter is left).
For the passionfruit glaze, I took about 1/2 cup of passionfruit juice or pulp and the leftover seeds from the passionfruit (the seeds are alright to eat- they're actually pretty nutritious and are a good source of fiber). Add about 1/4 cup of confectioner's sugar and stir until the sugar has disintegrated into the mixture. Add to the muffins as they're cooling. These also freeze well so if you have any leftovers, wrap in wax paper and foil and pop into the freezer. When you have a friend over or just a craving for one- take it out of the freezer about 1 day ahead of time. When you're ready to eat one, pop it in the microwave with a warm paper towel over the top for about 1 minute or until warm. Enjoy!
