Pistachio Loaf
Let's start off with a story about how I love all things made with pistachios. I've never tried a pistachio loaf before but thought I'd give it a try. I wanted a moist, flavorful, cake that could be eaten at any time of day. I think I found what I was looking for....
Let's get right to the ingredients so you can start baking!
Ingredients:
2 cups of all purpose flour
3 eggs
1 cup of sour cream
1 1/2 tsp baking powder
1 cup of sugar
1 tsp vanilla
1 stick of butter (about 1/2 cup), melted
1 package of Pistachio jello pudding mix
1/2 cup of milk
Instructions:
Preheat the oven to 350 degrees.
Combine the flour, sugar, baking powder together. Add the melted butter, sour cream, vanilla, eggs and stir. Add in the Pistachio pudding mix and the milk and continue stirring until all ingredients are combined and there are no lumps of sugar and/or flour. Add the mixture to a greased 9" x 12" loaf pan and place in the oven for about 45 minutes. Check after 30 minutes and use a cake tester to ensure that there is no residual batter, not fully cooked. Let cool and enjoy with your favorite drink (coffee, tea, lemonade, or just by itself!)
