Baked Cod with Roasted tomatoes and ginger carrots
Here's a great thing about fish- if you use a basic white fish such as cod or tilapia, you can marinate and season it based on how you're feeling and baked it in the oven. I wanted to figure out a way to make the least amount of cleanup since cleaning up after cooking is not my favorite part! I created packets using parchment paper and foil to cook each fish and accompanied it with some veggies. Each packet is a single serving.
Ingredients:
2 pieces of cod
3-4 medium sized carrots
1 pint of tomatoes
1 handful of dill
1 handful of parsley
1/4 cup of white wine (dry)
1/2 cup of lemon juice
1 Tbsp butter
1/2 Tsp ginger
A pinch of salt and pepper
Directions:
Preheat the oven to 400 degrees. Add the white wine and lemon juice and place the fish in the mixture in a plastic container to marinate for about half an hour. Sprinkle salt and pepper on both sides of the fish. Create the packets using parchment paper and place 1/2 Tbsp of butter at the bottom and one piece of cod on top of each. In a separate bowl, combine the carrots and ginger. Chop the tomatoes and place a handful of carrots and tomatoes around each piece of cod in each packet. Add parsley and dill to the top of each piece of fish. Wrap the packets like wrapping a sandwich up, folding over both sides so that they don't pop open. Place the individual packets on a baking pan and place in the oven for 35-40 mins or until the fish is completely opaque and the carrots have softened.
