Blueberry Muffins
Good morning! Add some of these blueberry muffins to make your mornings brighter. This is a simple recipe that you'll use over and over again. Plus, you can find some amazing blueberries at the farmers market this time of year. I added some applesauce to the batter as well.
Ingredients:
-1 and 3/4 cup flour
-3/4 cup sugar
-1/4 cup brown sugar
-2 Tsp baking powder
-2 eggs, slightly beaten
-1 cup of milk
-1/2 cup of applesauce
-4 Tbsp butter, melted
-2 Tsp vanilla
-1 pint of blueberries
Directions:
Preheat the oven to 350 degrees. This recipe makes a dozen muffins. I used muffin liners in the muffin pan so you don't have to grease any pans. Combine the flour, sugars, baking powder in a bowl and add in the wet ingredients: milk, eggs, butter, applesauce. Finally, fold in the blueberries. Mix until all ingredients are well combined. Bake in the oven for about 20 minutes or until muffins are light brown. You can also stick a toothpick in the center of each muffin to ensure that there is no uncooked batter.
