One pan balsamic chicken, asparagus, tomatoes &sweet potatoes
Ready for this? Here's a simple Sunday meal. It's a one sheet pan recipe....
Ingredients:
2-4 pieces of boneless chicken breasts
2 medium-sized sweet potatoes
1 pint of cherry tomatoes or 2 small tomatoes (I found hothouse tomatoes grown in NY!)
1 bunch of asparagus
1/2 cup of balsamic vinegar
4 Tbsp olive oil
1 Tbsp Basil
1 Tbsp oregano
1 Tbsp parsley
1 garlic clove
Salt and pepper to taste
2 Tbsp grated parmesan
Directions:
Preheat the oven to 400 degrees. Lay wax paper over the pan and generously grease the wax paper. Marinate the chicken in 1/4 cup of balsamic, add salt and pepper along with a portion of the spices. You can marinate the chicken for up to an hour but you can really just do it for about 20 minutes, while you prepare the other ingredients. Prepare the asparagus, tomatoes and sweet potatoes. Chop the sweet potatoes into smaller chunks. Combine the veggies, olive oil, and rest of the spices into a bowl and mix until well combined. Lay the marinated chicken onto the sheet pan and cook for about 5 minutes, turning over each piece about half way through. Remove after the 5 minutes and evenly distribute the rest of the veggies onto the pan. Veggies cook quicker so it's easier to bake the chicken first and then add the veggies. Drizzle the tops of the veggies with the remaining balsamic. Cook for another approximately 25 minutes or until the asparagus and sweet potatoes are cooked through. The roasted tomatoes will also begin to burst open. Remove from the oven and enjoy with a sprinkle of grated cheese over the chicken! This makes for an easy cleanup as well since the wax paper can just be thrown away- no mess on the sheet pan!
