Banana Crumb Muffins

When you wake up to these banana crumb muffins on the weekend, your day will begin a little brighter! 

Ingredients:

3 medium (very ripe) bananas

1 1/2 cups of flour

1/2 cup of sugar

1/3 cup of butter or 5 1/4 Tbsp butter (melted)

1 1/2 tsp vanilla extract (I used Rodelle)

1 egg (lightly beaten)

1 tsp baking powder

1 tsp baking soda

Topping:

1/2 cup of flour (all purpose)

1/4 cup of sugar (either brown sugar or white sugar)

2 Tbsp butter (cold)

2 Tsp cinnamon

Preheat the oven to 350 degrees. Grease muffin tins, enough for 1 dozen muffins, using a generous amount of cooking oil spray in each muffin hole.  In one mixing bowl, combine the flour, sugar, baking powder, baking soda and stir until combined.  In the center of the dry ingredients, add the melted butter, egg, vanilla and mashed bananas (feel free to use a fork to mash the bananas). Mix the ingredients together.  Using a spoon, scoop the batter into each muffin hole, filling about 1/2 of the way for each.  For the topping, combine the cold butter, ground cinnamon, flour and sugar. Cut the butter into the mixture by using a pastry blender or just a fork to break up the butter and create crumbs while gently mixing together the ingredients.  Top each muffin with some of the mixture and pop into the oven to bake for about 10-12 minutes.  Remove from oven and stick a toothpick or cake tester into the center of each muffin to ensure that no wet batter remains.  Enjoy once cool!
